Photoscan has graduated to 2.0.0. And it's pretty good, especially if you also wish to translate what's written on the graphic. The app doesn't do the actual translation, but you can save it to your notepad or other app and then use Google or Bing to translate...but, inaccurate translation is a limitation, as idioms abound, but that isn't the app's fault.
Anyway, I tried it out and found it to be pretty good.
You can find it here: https://www.microsoft.com/en-us/store/p/photo-scan/9nblggh4s87w#
It's pretty good if you wish to copy out long portions of text as well, cutting effort to zero. You won't have to retype from the graphic.
Also, for handicapped folks, it's really especially useful: "The speech feature supported by the app will read out all extracted text for you while the left-pane of the app will display all of your recent photos added to your Photos collection."
Better? It's free...but has some ads associated in the app window, but they're pretty unobtrusive. You can also choose language, which is very useful for text with diacritical markings.
Here are some screenies from my testing...using B&W and then a colored background:
The last screenie was done opening an image via MS Photo viewer, just to play around a bit.
There are other screenshots on the app's site in the MS store. "Windows 10 Photo Scan App is light in weight and features Optical Character Recognition (OCR). The feature has been a part of the Universal Windows Platform (UWP), which means that it can be used in all apps targeting Windows 10." - TheWindowsClub
